RECIPE: Fry according to Spreewälder-Art. Ingredients: 600 g veal from the leg, salt, pepper, 1 bunch of parsley, 1 clove of garlic, 2 tablespoons breadcrumbs, 1/4 teaspoon thyme grinded 2-3 tsp chives rolls 40 g clarified butter 200 ml meat broth 125 ml dry white wine 2 teaspoons food estesteststrong15 0 g whipped cream. Preparation: cut meat lengthwise, do not cut through. Then salt and pepper. Next, finely chop the parsley and garlic. Mix everything with the breadcrumbs, thyme and chive rolls and sprinkle on the meat. Now roll up the meat and tie it with kitchen twine or hold together with a roulade needle. Fry meat in a roasting pan with the clarified butter all around and then in the oven at 200 °C for approx. Fry for 60 minutes. Gradually pour with broth and wine.
