月見草はアカバナ科マツヨイグサ属に属する二年草または多年草です。花が5月から9月頃に開花し、1日のうちに花の色が変わる珍しい花です。夜になると花を咲かせ、朝になると萎んでしまう繊細で可憐な月見草の花は、夕方は白く、翌朝しぼむ頃は薄いピンク色に変化します。江戸時代に黒船来航とともに観賞用として日本に伝わって来たと言われております。 月見草の種子から抽出される月見草オイルにはリノール酸とガンマリノレイン酸(GLA)が多く含まれています。特にガンマリノレイン酸は母乳や月見草の種子など、ごく限られた植物からでないと得られない貴重な不飽和脂肪酸です。
