- Fermented campot pepper - from Cambodia directly from the pepper farm - hand-picked and gently produced with love. Excellent quality, made according to ancient ecological tradition. In the certified growing regions Kampot and Kep, the old traditions are preserved especially by small pepper farms. Fermented Kampot pepper is fresh, green, undried pepper, which is added with a small proportion of sea salt flakes.
- Produced in premium quality – we at Uncle Spice cooperate with a small farm from the south of the province of Kampot. There, each pepper bush is constantly under strict assessment. The pepperberries are already tested on the shrub for the highest quality. Only organic fertilisers such as guano (bat droppings) are used. Each individual peppercorn must be picked by hand from the panicle, as the grains are ripe at different times

Fermented Kampot pepper comes from the Kampot region in southern Cambodia and is one of the best pepper varieties in the world. Real Kampot green pepper can only be grown and produced in the south of the Kampot province and the Kep region (formerly part of the province of Kampot). The loamy, nutrient-rich soil and tropical climate are basic prerequisites for cultivation. It is considered a delicacy and is highly appreciated by gourmets and star chefs. The taste is very intense, fruity and sharp. Fermented Kampot pepper is made from the green pepper berries. Immediately after harvest, the fresh pepper berries are mixed with regional Kampot sea salt. This mixing process makes the fresh pepper durable and preserves the crisp, juicy fresh aroma in the green berries. Thus, the green pepper berries can be consumed fresh for a long period of time. Due to the incoming fermentation process, the green pepper berries turn into a dark green-brown to black colour, while maintaining the intense, fresh aroma. The taste is an exclusive symphony of pepper aromas! Initially slightly acidic and salty, with a very fresh highly aromatic pepper note. Afterwards an overwhelming "sharpness kick". Ideal for consumption in whole berries. (Can also be crushed with a mortar or knife if required. But nothing for the mill!!). Suitable for almost all meat and salad dishes and also great for cooking sauces and marinades. After opening the vacuum bag, simply place the fresh berries in the stand-up bag (product packaging) and store in the refrigerator. This keeps the fresh Kampot pepper and aroma last the longest.
